Natives call the traditional cuisine of Costa Rica - Comida Topica, due to the unique combination of Spanish traditions and local Indian cuisine. Unlike other Central American countries, here seasonings are used in minimal quantities. For cooking, Costa Rica uses a large amount of fish and seafood, as well as legumes, rice, corn and a variety of fruits.
The national cuisine of Costa Rica cannot be imagined without such a dish as Casados. This name refers to a mixture of rice and beans with meat. Equally popular are A La Pancha - baked fish, Arreglados - patties filled with meat, cheese or chicken, and of course, Conchas shells.
