Today, the cornerstone of Thai cuisine is rice. The signature dish in Koh Samui typically features a generous serving of rice accompanied by other dishes, some of which are intensely spicy, while others are not spicy at all. It's common for rice to be served with curry or a zesty fish and vegetable salad.
