Gallipoli's national dish and a real highlight of this resort is scapece. The dish is fish fried in bread pulp, originally marinated in vinegar and saffron. This cooking tradition has come down to the ancient times, when fish was marinated in this way during the heat of the day to prevent it from spoiling.
By the way, this is not the only dish of this kind in the resort of Gallipoli. It is a trademark of the region: locals often cook fish or meat in breadcrumbs. Fish is very commonly eaten here because of the fishing industry. Mussels, prawns, octopus and shells are not the gimmick or exotic, but commonplace Italian seaside fare.
What else is worth a try in Gallipoli is Puglia wine. The excellent quality/price ratio is matched by the marvellous taste of the special red grapes: troia, primitivo and negroamaro. That's why rosé wine has a special reputation here.
