Italian Cuisine
The national cuisine of Italy is characterized by an abundance of fresh Mediterranean ingredients. Pizza is another national dish of the southern part of Italy. In the northern part of the country, rice (used for making risotto) and cornmeal (polenta) are preferred. Northerners emphasize that authentic polenta or risotto should be cooked over an open fire.

Just keep in mind the siesta culture - it can be challenging to find open restaurants in Terracina during the daytime.
If you are interested in trying traditional seafood dishes, visit the central cooperative of fishermen in Terracina, located in Piazzale Lido. You won't find luxurious restaurants there, but they prepare fish exceptionally well, and the variety is vast.
