Modern cuisine in Playa de las Americas is an amazing mix of gastronomic traditions from different regions of Spain, the humble heritage of the indigenous Guanches (lightly roasted goat and lamb, barley dough gofios) and the influence of overseas cultures.
The first courses of traditional Canarian cuisine are a variety of vegetable soups (watercress, zucchini, mixed vegetable). Among the fish dishes (pescados), the most characteristic is the purple and yellow vieja (vieja), which is a guban with white meat, freshly caught and then lightly boiled. The fish is served with olive oil and sauce and is widely regarded as one of the best dishes in Canarian cuisine.

The Canary Islands often eat paella - rice with seafood, meat or chicken, vegetables. Also from the continent came to the Canaries and tapas - a light appetizer, which is a small portion of "stuff": cheese, ham, meat and so on.
