Borscht

The best traditional Ukrainian dishes

The country's favorite first courses are as follows:

  • Borscht is a favorite dish of all residents of Ukraine, widely known abroad as well. Of course, borscht is well known in the nearest foreign countries, there are many recipes for its preparation, and each hostess has their own. But first of all, it is a vegetable soup with beet at the base of the dish, optional meat filling, and, of course, sour cream as a perfect seasoning.
  • Kapustnyak is another vegetable soup, and as the name suggests, it's based on cabbage. It can be fresh or sauerkraut, which determines the sourness of the flavor.
  • Rassolnik - this dish usually uses pickles, which give the soup a special sour piquancy.

Second courses in Ukraine are well-known and appreciated:

Vareniki

Varenyky - the meaning of this dish does not need to be explained, it is known everywhere, but it is in Ukraine that it is especially loved. Varenyky with cherries, potatoes, mushrooms, cabbage, meat can be found in the list of recipes of any hostess and in most restaurants with national cuisine.

Galushki are simply pieces of specially boiled dough. The hearty dish is served with sour cream, and soup is made from it.

Bouzenina is a whole piece of meat, usually pork, baked with sauce or butter. It is served as an appetizer or even a separate hearty dish, usually with bread.

Shkvarki are finely chopped and fried pieces of lard or fatty meat. It's hard to call this dish strictly Ukrainian, but you can't do without it when cooking many dishes.

Zrazy - another traditional dish for Eastern Europe, and yet, quite Ukrainian. Again, each hostess has her own recipe for zrazy, but it's usually a cutlet or meatloaf with a filling.

The third course, or, as they say, for dessert in Ukraine, is gladly served:

Deruns

Nalistniki - simply, they are pancakes filled with stuffing, cheese, or meat and served with sour cream or jam.

Syrniki are small fritters with cottage cheese added liberally to the batter. They are usually sweet.

Deruns are an unsweetened dish that is nevertheless served more like a third course. They are fritters made from grated potatoes and flavored with sour cream.

Good drinks are also appreciated in Ukraine. Among ancient drinks, those obtained through fermentation are especially popular. These include honey, beer, kvass. Uzvaras and compotes are also popular here.

Varenukha

Vodka as a peculiar national drink only appeared in the XIV century, but already a huge number of tinctures are made on its basis. Vodka is infused on berries, fruits, even dried fruits.

Varenukha is vodka heated, but not brought to a boil, with the addition of honey and spices.

Wine in Ukraine is produced in two regions, in the south of the country, including the Kherson region, and in Transcarpathia, where the unique warm climate allows sweet grapes to grow.
